Cook leeks, celery, and butter for 10 minutes,
Add 1 cup water. Cover and cook 10 minutes. Add
potatoes and add water to cover.
Cover and cook 10 more minutes. Add milk and
simmer until potatoes are tender. Season with salt
and pepper, parsley and cayenne.
This recipe can be changed by adding cauliflower,
mushrooms, summer squash, and mild peppers, etc.
It's fun to experiment with ingredients and flavors
and soup is a great way to get lots of vegetables
into our diet.
