     Mexican Lentil Chili

Ingredients
1 c. Lentils
3 c. Water
2 Tbl. Olive Oil
1 c. Onion, chopped
1 clove Garlic, minced
14.5 oz. can Diced Tomatoes
1 c. Red bell pepper, chopped
1 c. Corn
1.5 tsp. Cumin
 
1 Tbl. Chili powder
1 Tbl. Garlic powder
1 Tbl. Onion powder
1 Tbl. Paprika
1 tsp. Sea salt
1/2 tsp. Cayenne pepper

Instructions
Add olive oil and onions to a pot and cook until they begin to brown. Careful not to burn them. While onions are cooking, rinse your lentils and set aside. When the onions start to brown, add the rest of the ingredients and bring to a boil
Once boiling, turn the heat down to a simmer. Cook for 10 to 15 minutes or until lentils are tender. Check to see if you need to add any additional seasoning.
Turn off heat. Serving immediately or cool properly and store in refrigerator for up to seven days.
Serving Suggestions
Use one serving of lentil chili and put in a tortilla with cheese and vegetables for a complete meal.
