     Boston Cream Pie

Ingredients
Crust-
2 cups graham crackers
1/4 tsp salt
1 tbsp sugar
1/2 cup butter
Filling-
2 1/2 cups milk
1/2 cup sugar
 
3 tbsp cornstarch
Pinch of salt
1 tsp butter
2 eggs separated
1 1/2 tsp vanilla flavoring
2 tbsp sugar (additional)
1/4 tsp vanilla flavoring (additional)

Instructions
Crust- Add salt and sugar to 2 cups of graham cracker crumbs and stir well. Add butter and blend. Put in 10 inch pie plate (keeping out 1/2 cup of crumbs for top.) Bake at 350 F for 15 minutes
Meanwhile prepare filling Heat 2 1/4 cups milk in top part of double boiler; add sugar. Blend corn starch with remaining milk, add to heated mixture, stirring until mixture thickens. Add salt, butter, beaten egg yolks and vanilla. Stir well & turn into baked pie shell. Beat egg whites, add additional salt, sugar and vanilla with remaining crumbs and brown in slow oven. Cool and serve.
