     Diane’s Carrot Cake

2 cups brown sugar
1 1/2 cups oil
4 beaten eggs
2 cups flour
2 tsp soda
1 tsp each salt, cinnamon, nutmeg, cloves
1/8 tsp ginger
3 cups grated carrots

Bake at 350 for 30-40 minutes
Icing 4 oz cream cheese 1/2 cup margarine (use Butter, the 70’s were a margarine craze time, but butter is better) 2 cups icing sugar Vanilla to taste.
