Mince garlic. Halve, peel, and thinly slice onion.
In a small bowl, mix together mayonaise and as
much garlic as you like. Season with salt and
pepper.
Heat a drizzle of oil in a large pan over
medium heat. Add onion and cook until
caramelized, 8-10 minutes, tossing
occasionally. Stir in balsamic vinegar and 1
tsp sugar. Continue cooking until syrup, 1-2
minutes more. Season with salt and pepper and
remove from pan.
Wipe out pan. Heat a drizzle of oil in same pan
over medium high heat. Shape beef into four
patties. Season all over with salt and pepper.
Add to pan and cook until burgers are done, 3-5
minutes per side. Top each with Monterey jack
cheese and cover pan until cheese melts.
While burgers cook, place buns in oven to toast,
about 2-3 minutes. Spread split sides of buns with
mayonnaise mixture. Top with a burger and as much
onion jam as you like. Serve.
