     Sun-dried tomato and beef soup

1 piece about 1 lb beef brisquit
4 C water
6 black peppercorns
1 dried bay leaf
4 tbl butter
1 md onion chopped coarsely
1 clove garlic crushed
1/3 C flour
6 large roma tomatoes chopped coarsely
2 tbl tomato paste
1/2 C heavy cream
1/3 C sun dried tomatoes chopped finely
2 finely chopped basil

Place beef in crockpot with peppercorns, water and bay leaf. Cover and cook on low for 10 hours. Transfer meat to a bowl and shred and set aside. Reserve broth.
Melt butter in a pan over md heat. cook onion and garlic ,stirring until onion softens. Add flour, cook stirring until mixture thickens. Gradually add in broth and stir until soup boils and thickens slightly. Add fresh tomatoes and paste. Return to a boil. Reduce heat, simmer covered 10 minutes. Cool 15 minutes.
Blend in batches until smooth. Return soup to pan and add cream. Stir over md heat until hot. Season to taste..
Serve soup topped with shredded beef, sun dried tomatoes and basil.
