Heat the butter and olive oil in a soup pot over
medium heat. Add the vegetables and cook until
softened, about 5 minutes. Add the ham and tomato
paste. Cook for additional 10 minutes. Add the
garlic and cook for one minute.
Add stock, water, and thyme and bring to a boil.
If using smoked ham hawk add it now and simmer for
30 minutes. If not, go ahead and add the lentils.
Reduce heat and let gently simmer, covered, for
about 45 minutes.
