     Lentil soup with ham

Ingredients
1 large onion, diced
1 cup carrots diced
1/2 cup celery, diced
olive oil
1 tbsp butter
1 tbsp garlic, minced
1 tbsp tomato paste
1/2 cup diced ham (I buy the breakfast ham steak)
1 cup lentils
 
4 cups chicken broth
2 cups beef broth
1 cup water
1/2 tsp dried thyme
1 smoked ham hawk optional

Instructions
Heat the butter and olive oil in a soup pot over medium heat. Add the vegetables and cook until softened, about 5 minutes. Add the ham and tomato paste. Cook for additional 10 minutes. Add the garlic and cook for one minute.
Add stock, water, and thyme and bring to a boil. If using smoked ham hawk add it now and simmer for 30 minutes. If not, go ahead and add the lentils. Reduce heat and let gently simmer, covered, for about 45 minutes.
