     Green Eggs; No Ham

Ingredients
8 eggs
2 green onions
small handful of fresh parsley
small handful of fresh dill
2 large avocados
4 slices of freshly toasted bread of choice
salt to taste
pepper to taste
1/3 cup sour cream
 
couple pats of butter

Instructions
Slice up green onion and separate the white from the green portion. Finely chop parley and dill and add to the green portion of the onion. Mix sour cream, salt, and pepper into the green herb mixture, then add the eggs and whisk to combine. Set aside. In a small bowl, combine avocado and a little salt and pepper until it becomes the texture of guacamole. Set this aside for step 3.
Heat a medium non-stick frying pan and add butter and whites of the onion; cook until onion begins to become translucent. Add egg mixture from above to hot pan and cook until the eggs are set.
Assembly! Spread avocado mixture on the 4 slices of toast. Top 4 equal portions of the scrambled egg mixture atop the toast and avocado. Garnish with chopped herbs or fresh greens.
