zest and juice of 2 lemons, 1 additional lemon, sliced for serving
1/4 cup chipped mint leaves
1/4 cup chopped parsley leaves
2-3 medium zucchini, cubed
2-3 cups feta cheese
1/2 cup pine nuts
salt for boiling with orzo and seasoning vegetables
2 carrots halved length wise and sliced thin
black pepper for seasoning vegetables
2 tbsp garlic
oil for sautéing
Instructions
Bring water and 1 tbsp of salt to boil, add orzo,
cook as directed on package.
Place shallot, onion, zucchini, pine nuts, carrot
and garlic in pan with oil and sauté (for better
flavor grill on Blackstone). Season with salt and
pepper.
When orzo is done cooking, add mint, parsley, zest,
juice, red wine vinegar and salt/pepper to taste.
When vegetable mixture is al dente, add to orzo
mixture, stir. Add feta cheese. Serve warm with
lemon wedge on the side.
