     Pork - Pulled Pork

Ingredients
2.5 lbs boneless pork butt
Rub-
3 tbl light brown sugar
2 tsp salt
1 tsp ground mustard
1 tsp black pepper
1 tsp onion powder
1 tsp paprika
½ tsp garlic powder
 
¼ tsp cayenne pepper-
Wet Ingredients
½ c barbeque sauce
¼ c apple cider vinegar
1 tsp liquid smoke
1/8 c light brown sugar
½ tbl prepared yellow mustard
½ tbl Worcestershire sauce
1 large onion, chopped PLUS 2 large cloves garlic, crushed

Instructions
Mix together both wet ingredients and set aside. Mix wet ingredients and set aside
Add 2 tbs olive oil to Instant Pot and set to saute. Once it indicates hot, add pork. Sear on each side. Remove pork and set aside on a plate.
Deglaze pot with 1/2 c chicken broth. Add sliced onions and garlic then put pork on top. Pour wet ingredients over the pork.
Pressure cook/manual on high pressure for 20 minutes per pound.Then let pressure release naturally for 20 minutes or until pin drops. Remove pork to a large bowl and shred with 2 forks. Add meat back to the pot. Stir and serve.
Serving Suggestions
Serve on Hawaiian or brioche buns.
