     CHICKEN WITH DIJON MUSTARD

Ingredients
2 tbsp olive oil
4 chicken drumsticks
sea salt & black pepper
1/4 cup chopped shallots
1 cup white wine
2 tsp ground coriander
1.5 cups chicken broth
2 tbsp whole grain mustard
3 tbsp creme fraiche
 
1 tbsp chopped tarragon

Instructions
Heat olive oil in skillet until shimmering. Season chicken with salt and pepper. Cook over moderate heat until golden brown all over. Transfer chicken to a platter. Add shallot to skillet and cook until just soft. Add wine and simmer until nearly evaporated.Add coriander and then broth. Return chicken to skillet. Cover and simmer for 45 minutes. Transfer chicken to platter and keep warm.
In a small bowl, whisk the mustard with the creme fraiche and tarragon. Add the mixture into the skillet and simmer for approximately 5 minutes. Return chicken to skillet and turn to coat.
Simmer chicken for a few minutes and then serve.
