Heat olive oil in skillet until shimmering. Season chicken with salt and pepper. Cook over
moderate heat until golden brown all over. Transfer chicken to a platter. Add shallot to skillet
and cook until just soft. Add wine and simmer until nearly evaporated.Add coriander and
then broth. Return chicken to skillet. Cover and simmer for 45 minutes. Transfer chicken to
platter and keep warm.
