     Portobello Sandwich with Au Jus

Ingredients
2 Portobello mushrooms, sliced into strips
1/2c to 1c mushroom stock
1 rosemary sprig
Garlic aioli, or garlic and mayo mixed together
4 slices of provolone cheese
2 ciabatta rolls, cut in half
Handful of arugula
 

Instructions
Spread the garlic aioli on the ciabatta bread. Then top each piece with a slice of provolone cheese. Place roll facing up in toaster oven and bake at 400 degrees until the cheese is golden brown and bread is toasted.
Heat a large saute pan on medium. Add 2tb oil. Add mushrooms when oil is hot. Season with salt and pepper and cook until softened, stirring occasionally. Add rosemary sprig and mushroom stock to the pan. If salty, dilute with a little bit of water. Cook for another 5 minutes. Discard rosemary.
Transfer just the mushrooms to the ciabatta bread. Top with arugula. Slice in half. Reserve the mushroom au jus for dipping.
