     Mediterranean Pasta Salad

Ingredients
1/2 cup grape tomatoes sliced in half
1 medium red bell pepper coarsely chopped
1/2 medium red onion sliced into thin strips
1 medium zucchini coarsely chopped
1 cup broccoli florets
1/2 cup oil packed artichoke hearts drained
1/4 cup olive oil
1/2 tsp salt
1/2 tsp pepper
 
1 Tbsp dried oregano
1/2 tsp garlic powder
4 oz crumbled goat cheese
1/2 cup grated Parmesan cheese
8 oz chickpea penne or red lentil rotini

Instructions
Mix tomatoes, bell pepper, onion, zucchini, broccoli, artichoke hearts. Mix olive oil, salt, pepper, oregano and garlic powder. Pour over vegetables and toss lightly. Sprinkle with goat cheese and parmesan. Lightly mix. Fold in cooked, rinsed and drained pasta. Let the pasta rest for 1-2 hours in refrigerator to marinate. Squeeze fresh lemon juice before serving for an added burst of freshness.
Variations I did. Added 1 diced jalapeno to vegetables Topped with sliced avocado Added additional coarse pepper
