     Skinny Chicken Parmesan

Ingredients
4 thin boneless skinless chicken breasts (can find at Publix)
1/2 cup seasoned breadcrumbs
3 T grated parmesan cheese
2 T melted butter
1 T olive oil
2 c quick marinara sauce or store bought
9 T part-skim mozzarella cheese
 

Instructions
Lightly spray baking sheet. Combine bread crumbs and parmesan. Combine butter and oil. Brush on both sides of chicken and salt and pepper chicken. dredge chicken in breadcrumbs. Bake at 450 for 20 minutes. Flip chicken and bake 5 more minutes. Top with mozzarella and bake until melted. Serve with marinara and spaghetti.
Quick Marinara- 2 T olive oil, 5 clove minced garlic, 2 - 28 oz can crushed tomatoes, 3/4 t kosher salt, fresh ground pepper, chopped fresh basil Heat saucepan. Add oil and garlic. Saute while stirring 2 min. Add 1/4 c water, tomatoes, salt and pepper. Cover and bring to a boil. Reduce heat to low and simmer 10 min. Remove from heat and add basil.
