Start off by browning the ground beef and ground
chicken in separate frying pans. Drain grease and set
aside.
In a 4 qt, enameled Dutch oven sauté the onions, celery
and parsley in olive oil until thoroughly cooked.
Add the chicken stock, ground beef, ground chicken,
garlic, salt, red pepper flakes and mushrooms. Simmer
on low heat for two hours, stirring as needed.
Add the tomato paste, stirring in well until all
dissolved. Place the Dutch oven in a 200 degree oven
and simmer for an additional 4 hours.
