Saute chicken cubes in oil in a large pot. Set chicken aside. Add chicken broth and cream cheese to the pot. Once cream cheese is melted, sprinkle xanthan gum and mix in. Add vegetables, chicken, and season with salt and pepper and continue to cook and thicken while you mix the biscuit topping.
Preheat oven to 400. Add almond flour, baking powder, baking soda, and salt to a bowl and mix using whisk or fork. In another bowl, add the eggs, sweetener, sour cream, and butter and mix until combined. Add the cheese and continue mixing. Add the dry ingredients into the wet and mix.
Pour the chicken mixture into a greased 9x13 dish. Dollop the biscuit batter over top. Bake 25-30 minutes or until the biscuits are golden.
