     Kharcho (pronounced harcho)

Ingredients
3 lbs beef stew meat
Salt and pepper to taste
Olive oil
1 medium onion chopped
2 celery stalks diced.
8 cups beef stock
28 oz can diced tomatoes
2 bay leaves
1 tsp ground coriander
 
1 tsp smoked paprika
2 cloves garlic minced
1/2 cup cooked rice
Lemon juice to taste
1/4 cup fresh parsley
Dill to taste

Instructions
Season meat with salt and pepper,In a large stockpot Heat 2 tablespoons of olive oil.When oil is hot add to beef,Sauting until brown on all sides. Removed from pot and set aside.Add chopped Onion And celery Saute until soft, about 5 minutes.
Add the tomatoes with there juice,The beef stock,Bay leaves,And the meat. Bring to a boil then reduce heat, cover and simmer 1 1/2 hours or until beef is tender.Add the rice, lemon juice, garlic, coriander And paprika. Cover and simmer For 10 minutes.Add the parsley and dill And simmer for 10 minutes Season with salt and pepper and serve
