Season meat with salt and pepper,In a large stockpot Heat 2
tablespoons of olive oil.When oil is hot add to beef,Sauting until
brown on all sides. Removed from pot and set aside.Add chopped Onion
And celery Saute until soft, about 5 minutes.

Add the tomatoes with there juice,The beef stock,Bay leaves,And the
meat. Bring to a boil then reduce heat, cover and simmer 1 1/2 hours
or until beef is tender.Add the rice, lemon juice, garlic, coriander
And paprika. Cover and simmer For 10 minutes.Add the parsley and dill
And simmer for 10 minutes Season with salt and pepper and serve
