     Italian wedding soup

Ingredients
1 lb Meatballs
1 tbsp olive oil
1 cup carrot Julian
4 cloves garlic minced
1 celery stalk chopped
1 large onion diced
1 cup of dry orzo pasta
6 oz fresh spinach chopped
8 cups of chicken stock
 
Pecorino romano cheese for serving

Instructions
Prepare 1 batch of meatballs per recipe.
In a large stockpot Add The olive oil onions carrots and celery And saute Until softened. Add the garlic and saute for 1 more minute.Add the chicken broth, seasoned the soup with salt and pepper and bring to a boil,Add in the pasta and the meatballs, reduce heat to a simmer.
Cover and cook, stirring occasionally until pasta is tender and meatballs have cooked through About 20 minutes,Add in spinach and cook For another 10 minutes.Serve with a sprinkle of the cheese.
