     Macedonian Baked Beans

Category   Entrees - Maindishes
Sub Category   None

Ingredients
1 Jar of Randall Great Northern Beans (don't drain)
(2) medium onions chopped up
Mazola oil
Cut up (5) yellow gypsie sweet peppers (opt) but best with them
Paprika - 1 Heaping Tablespoon
1 Small 8 oz can of Hunts tomato sauce
Dry mint - palm full
water - enough water to fill 1/2 randall bean jar
(no salt)

Instructions
Pour the beans in a pot & put 1/2 jar of water to rinse out bottom of jar & put in the pot. Warm over the stove, put mint in too cook together & bring to a boil. (set aside)
In a 2nd pot pour oil to cover btm of pot but a little more, fry up chopped onions a little then add peppers to sautee (soft). Add paprika, stir but don't burn & cook a bit. Add tomato sauce & cook awhile & keep stirring.
Take a spoon with holes of beans and place in onion mixture. Eventually, put all beans in onion/pepper mixture. Don't pour water in untill last, because all water may not be needed. Most likely will use all. Stir while in pan.
Bake in oblong pan at 375 for 1/2 hr - 45 minutes. We want it juicy but not soupy! Top with a little black pepper before baking - may need just a touch of salt....taste to check.
