- Prepare grill to medium high 1. Combine lime
juice, olive oil, cumin, garlic, syrup, hot sauce in
small bowl and whisk. 2. Place shrimp in shallow
bowl and drizzle 1 T lime juice mixture and toss to
coat. Reserve remaining lime juice mix. 3.Thread shrimp onto metal
skewers. Lightly
coat corn with cooking spray. 4. place shrimp and
corn on grill rack coated with cooking spray. Grill
8 minutes turning kebobs once and corn several
times. remove from grill.
5. Remove shrimp from skewers and place in a large
bowl. 6. Cut kernels from cobb. 7. Add corn,
chopped lettuce, green onions, cilantro, black
beans and tomatos to shrimp. 8. Drizzle reserved
lime juice mixture over mixture and toss to combine.
9. Divide corn chips into 6 bowls, add 1 cup shrimp
mixture. 10. Garnish with sour cream and avocado.
