     One pot rustic farro and sausage soup

Ingredients
3-4 carrots
1 large yellow onion
1 package ground Italian sausage
3 Roma tomatoes
1 1/2 tsp Italian seasoning
1/8 tsp ground white pepper
1 cup farro
4 packets of chicken stock concentrate (I use savory choice from amazon)
Parmesan cheese
 

Instructions
Finely chop onion. Heat a drizzle of olive oil in a large pot over medium high heat. Add sausage and onion and cook until browned, 4-6 minutes. Meanwhile, dice tomato. Peel carrots and small dice.
Stir tomato, carrot, Italian seasoning, white pepper, and farro into pot. Cook for 1 minute. Stir in stock concentrate packets and 6 cups water. Cover, bring to a boil, then immediately reduce heat to low. Simmer, covered, until farro is tender, about 20 minutes.
Season with salt and pepper to taste. Top soup with Parmesan.
