     The French Onion Soup

Ingredients
2 TBSP BUTTER
1 TBSP VEG. OIL
5 LARGE ONIONS OR MORE DEPENDING ON HOW MANY YOU PLAN TO SERVE
1 TBSP FLOUR
1 L OF BEEF BROTH
POCKET OF THYME, BASIL. BAY LEAVES
GLUG OF BRANDY (COULD ALSO USE BEER)
CHEESE, MOZZA, SWIZZ, GUEYRE, OR PARMESEAN
1 CUP OF DRY WHITE WINE
 
IF YOU DON'T HAVE DRY WHITE WINE USE 1/4 CUP APPLE CIDER VINEGAR

Instructions
In a large stockpot put the butter in a large stock pot and add the oil. Add the sliced onions season well with salt (salt will pull out the flavor) Caramelize the onions (about 30 minutes)
Add a glass of dry white wine and deglaze and scrap the brown bits. Add 1 TBSP of flour and cook x 2 minute Add 1 L of beef stock Add a bunch of herbs as noted above tied together or put in a cheese cloth
Let it simmer another 20 minutes. Add a dash of cognac or brandy at the end
Pour into oven proof dishes Build the crust by grilling the bread and rub with garlic. Top the bread onto the soup and let it float. Add an insane amount of cheese Broil in the oven.
