     French Onion Soup

  Red Wine

4 yellow onions, thinly sliced into rings
1/2 cup butter
1 28oz container beef broth
2 cups water
1/2 cup red wine
1/2 tea pepper
1/4 tea salt
fresh thyme sprigs
sliced French bread
sliced gruyere cheese
shredded Parmesan cheese

Saute onion in butter in a dutch oven over medium heat for about 20 minutes or until tender.
Gradually add beef broth, water, wine, and seasonings. Bring to a boil; reduce heat, and simmer uncovered for 15 minutes.
To serve, ladle soup into oven safe bowls, top with slices of bread and layer cheese on top. Broil until cheese melts.
