     Roasted Broccoli-Cheese Soup

Ingredients
1 head broccoli cut into bite size pieces
1 tbsp olive oil
4 cloves garlic minced
1 cup chopped onion
1 cup chopped carrot
5 tbsp butter
1/4 cup flour
2 cups 1/2 and 1/2
2 cups shredded cheddar
 
2 cups chicken broth

Instructions
Oven 350. Toss broccoli with olive oil, sprinkle with 1/2 the garlic. bake 15-20 minutes tossing occasionally
Melt 1 tbsp butter in soup pan, saute onion and carrot until tender 5 to 7 minutes. Remove to plate
Add remaining 4 tbsp butter to pan. When melted add flour slowly. Slowly stir in half and half, then stir in broth. Simmer until thickened 10-15 minutes
Drop in cheddar cheese, add back veggies and broccoli. Simmer 5 minutes.
