     Crispy Fried Green Tomato Sandwiches

4 firm green tomatoes (tomatillos)
3/4 C canola oil
Bowl 1....Dredge
1/3 C Wondra flour
1 tsp paprika
1/2 tsp garlic salt
Bowl 2.... Dip
2 eggs
3/4 C buttermilk
Bowl 3....Breading
1/2 C Wondra flour
1/2 C Masa Harina
1/2 C Panko crumbs
1 tsp salt
1/2 tsp white pepper
1/2 tsp paprika

Slice green tomatoes in 1/4 inch slices Mix ingredients for bowls 1,2 and 3 Dip each tomato slice first in bowl 1, coating both sides, Then dip in bowl 2 and then in bowl 3. Set coated tomato slices on place or rack until all are coated.
Preheat the oil to 340 degrees and fry until golden on both sides. Cool on wire rack and sprinkle with kosher salt. To make sandwiches take italian slice bread, spread southern pimento cheese (under appetizers) on both sides of bread, top with tomato slices and 3 slices of candied bacon,( recipe under appetizers and below) Close sandwich and saute in butter on both sides until golden
