     Herb Crusted Lamb Tenderloin

1/2 c mint
2 Tablespoons thyme
2 Tablespoons rosemary
1/2 c Panko
1 teaspoon Kosher salt
1/2 Tablespoon pepper
1 1/2 pounds rack of lamb, bone removed
1/4 c Dijon mustard
1/4 c olive oil

Add all of the herbs, breadcrumbs, salt, and pepper to a food processor. Pulse until herbs are finely chopped. Lightly coat the lamb with the mustard and then coat with the herb mix. Heat the oil in a large sauté pan, sear the lamb on all sides Continue to rotate the lamb to keep it from burning, cook until desired doneness is achieved..
