2 pounds boneless, skinless chicken breasts, cut into bite-sized chunks
Garlic powder
At least 6 cups Rice Krispies
Olive Oil

Instructions
Pour the buttermilk in a medium bowl, add a pinch of salt and
pepper. Whisk together. Add the chicken bites and stir to coat, so
that the chicken is submerged. Cover and refrigerate at least 1
hour and up to overnight
Put the Rice Krispies in the bowl of a food processor and pulse
until the cereal is mostly ground up but with some pieces still
intact. Place the crumbs in a large bowl, season with a pinch or
two of salt, pepper, and garlic.
Preheat the oven to 375 degrees. Line a large, rimmed baking
sheet with parchment paper. Set aside.
Remove the chicken from the refrigerator, drain the pieces and
dredge in the cereal mixture, transferring to the prepared pan as
you go. Drizzle the tops with a little olive oil and bake for 10-12
minutes, until golden brown and cooked through.
