     Asian Pear and Grape Cabbage Salad

For Dressing
1 tsp Dijon mustard
Salt to taste
1 tbsp-1-1/2 tsp pure maple syrup
cup-1 tbsp olive oil
cup apple cider vinegar
For Salad
head red cabbage
head savoy
1 Asian pear, halved, cored and sliced into thin strips
1 Red Anjou pear, halved, cored and sliced into thin strips
1 cup seedless red grapes halved
1 cup seedless green grapes, halved
cup toasted walnut pieces

In a small bowl whisk, cabbage together vinegar, mustard salt and maple syrup. Slowly whisk in olive oil until well blended to make a vinaigrette. Taste and adjust seasonings to your liking.
Cut each cabbage in half lengthwise into two wedges then cut away and discard core from each wedge. Cut each wedge cross wide into thin shreds. Toss together cabbage, pear slices grapes and walnut pieces in serving bowl Drizzle with vinaigrette and toss well.
Refrigerate any leftover.
Serving Suggestions
Serve immediately.
