Variety of vegetables - broccoli, squash, zucchini, cauliflower
4 tbsp unsalted butter - softened
1/2 tsp miso paste
1/2 tsp sherry vinegar
olive oil
Instructions
1. Heat oven to 475 and move rack to the middle
2. Combine butter, miso paste, and sherry vinegar in
small bowl and stir until smooth.
3. Chop vegetables into bite size pieces
4. Place vegetables in a single layer on baking
sheet.
5. Coat vegetables with 4-5 tbsp olive oil and
season with salt and pepper.
6. Roast vegetables until they are tender and
slightly blackened - 12-15 minutes
