     Enchilada Pasta

Ingredients
4 cups mini penne
4 cups vegetable broth
1 can 15 oz black beans
1 can 14.5 oz diced tomatoes
1 medium yellow bell pepper - chopped
1 medium red bell pepper - chopped
1 cup corn - fresh or frozen (thawed)
1 can 10 oz enchilada sauce
2 tbsp taco seasoning
 
1/2 cup shredded cheddar cheese
Limes - cut into wedges

Instructions
1. In a large pot combine the first 9 ingredients. 2. Bring to a boil, reduce heat, simmer uncovered for 12-15 minutes. 3. Top with cheese and lime if desired.
