1/2 tsp grated orange zest, plus 1/4 cup of orange juice (2 oranges)
3 tbsp white miso
1 tbsp packed light brown sugar
1 tbsp rice vinegar
1/4 tsp cornstarch
pinch of cayenne pepper
1/4 tsp salt
1/4 tsp pepper
4 6-8 oz salmon filets
Instructions
1. Add orange zest and juice, miso, sugar, vinegar,
cornstarch, and cayenne to small saucepan
2. Whisk until smooth
3. Set aside
4. Sprinkle salt and pepper in skillet, place salmon
on top of salt and pepper.
5. Cook over medium heat without moving salmon until
fat puddles around filet - about 6-8 minutes
6. Carefully flip salmon filets - you may need to
use more than one spatula or tongs and a spatula.
7. Cook for another 6-8 minutes - transfer to plate
8. Bring miso sauce to a simmer over medium-high
heat.
9. Whisk about 1 minute until thickened.
10. Spoon over salmon.
