3 c flour (360 gr)
1 T (14 gr) baking powder
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp cinnamon
1/2 c (113 gr) melted butter and cooled slightly
1/2 c br sugar packed
1/2 c white sugar
2 eggs at room temp
2 tsp vanilla
3/4 c (170 gr) full fat sour cream (I used Greek yogurt)
1 c (227 gr) mashed ripe banana
1 pint (292 gr) fresh blueberries (see notes)
1/2 c toasted walnuts chopped fine
Sparkling sugar optional

Preheat oven to 400 line a 12 cup muffin tin with paper liners or spray well.
In a lg bowl sift together flour, baking powder, nutmeg, cinnamon and salt. In a separate bowl whisk together melted butter both sugars eggs vanilla sour cream and mashed bananas. Mixing till fully incorporated. Add dry to wet in 1/3 increments. using a rubber spatula mix till just combined. do not over mix or muffins will be dry. Fold in blueberries and walnuts.
Divide equally among the prepared cups. These will be very full with a well rounded top. Sprinkle w sparkling sugar if using.
Bake in center of oven for 24-26 min. My oven is a little wonky so did 375 for 25-30 min. Perfect. They come out a rich golden colour. Cool muffins at least 15 min in the pan then transfer to a cooling rack.
Serving Suggestions
Notes. I used frozen berries. Rinsed them under cold water to get rid of ice crystals. Drained on a towel while putting other ingredients together.
