1.Preheat oven to 325 F
2.Season beef chunks on all sides w/salt & pepper.
Toss in flour to coat well.
3.Heat olive oil in large Dutch oven over medium
heat. Brown beef in batches, on all sides, for 3-4
minutes per batch. Don't worry about cooking it
all the way thru at this stage. Transfer browned
beef to a plate & set aside.
4.Add onions, garlic, carrots to Dutch oven; cook,
stirring occasionally, for 2-3 minutes, or until
slightly browned.
5.Add potatoes, beef broth, tomato paste, bay
leaf, thyme, Worcestershire sauce; scrape browned
bits from bottom of pot.
6.Bring to a simmer, sitrring & return beef to the
pot. Cover & transfer to preheated oven.
7.Cook for 2-2 1/2 hours, or til beef is very
tender. Remove bay leaf. Season w/salt & pepper to
taste.
