     Easy Homemade Beef Stew

  Red Wine or Fresh Lemonade

2 lb. Beef Chuck Roast, cut into 2-inch chunks, excess fat removed
1 Tbsp Kosher Salt
1/2 tsp Coarsely Ground Black Pepper
2 Tbsp Gluten-free All-Purpose Flour or Whole Wheat Flour for non-gluten
2 Tbsp Olive Oil
1/2 Yellow Onion Chopped Large
4 Garlic Cloves
1 Large Carrot or 2 small-medium, cut into 2-inch chunks
2 Yukon Gold Potatoes, diced into 2-inch pieces
2 Cups Beef Broth
1/4 Cup Tomato Paste
1 Tbsp Worcestershire Sauce
1 Bay Leaf
2 tsp fresh Thyme leaves, for garnish, optional

1.Preheat oven to 325 F 2.Season beef chunks on all sides w/salt & pepper. Toss in flour to coat well. 3.Heat olive oil in large Dutch oven over medium heat. Brown beef in batches, on all sides, for 3-4 minutes per batch. Don't worry about cooking it all the way thru at this stage. Transfer browned beef to a plate & set aside. 4.Add onions, garlic, carrots to Dutch oven; cook, stirring occasionally, for 2-3 minutes, or until slightly browned. 5.Add potatoes, beef broth, tomato paste, bay leaf, thyme, Worcestershire sauce; scrape browned bits from bottom of pot. 6.Bring to a simmer, sitrring & return beef to the pot. Cover & transfer to preheated oven. 7.Cook for 2-2 1/2 hours, or til beef is very tender. Remove bay leaf. Season w/salt & pepper to taste.
