4 Cups very thin peeled, sliced cucumbers mini cakes work well)
1/4 Cup finely sliced red onion
1/4 Cup diced red pepper
1/4 Cup rice wine vinegar
1 tsp. honey
1 tsp. sesame seeds
1/2 tsp. toasted sesame seed oil
1/4 tsp. red pepper flakes
1/4 tsp. sea salt
Instructions
Add the cucumber, red onion, red pepper and sesame seeds to a
medium bowl and set aside.
In a small bowl, mix together rice wine vinegar, honey, sesame oil, red
pepper flakes and sea salt. Add this dressing to the cucumber bowl.
Toss to mix everything.
Serve immediately, or cover and let sit in the refrigerator for an hour
or two to let the flavors meld.
Half of this recipe is perfect for two people.
