1 stick plus 2 T. Softened butter (prefer unsalted)
1 egg yolk
2 t. Brown sugar
Instructions
Preheat oven to 375 degrees. Prepare a 9x9 baking
pan with spray. Filling- Mix blueberries, corn
starch, lemon zest, lemon juice, 1/4 c sugar and
cinnamon together. Set aside while making dough
Dough- mix flour, 1/2 c. Sugar, baking powder,
butter and egg yolk together with a pastry blender
or fork. Save 1 cup of dough mix for topping. Press
remaining dough into pan.
Pour blueberry mixture on top of dough in pan. Add
brown sugar to reserved Dough/topping. Sprinkle
topping over blueberry mixture, evenly distributing
it.
Bake at 375 degrees for 35-45 minutes until top is
golden brown. Cool completely. Store leftovers in
covered container in the refrigerator. (Bars will
get soggy if stored in fridge).
