* Beat eggs and juice together, stir in oats, baking powder and Splenda until blended.
Fold in apple, orange or lemon peel, cottage cheese, applesauce and Cinnamon adding a little water if too thick.
* Spray a non stick skillet and for each pancake drop in 2 Tblspn of mixture and cook until bubbles appear on surface, turn over and cook other side. Repeat until 12 pancakes are cooked.
( The cottage cheese melts through, but if not liked you could use ricotta or sour cream)
