     Parsley Chimichurri

Ingredients
1 c firmly packed fresh flat-leaf parsley, trimmed of thick stems
3 to 4 garlic cloves
3 tbl chopped fresh rosemary
1/3 c extra virgin olive oil
2 tbl red wine vinegar
1/2 tsp sea salt
1/8 tsp freshly ground black pepper
1/4 tsp red pepper flakes
 

Instructions
Process parsley, fresh oregano, and garlic in a food processor for several pulses. Place in a small bowl.
Stir in the olive oil, vinegar, salt, pepper, and red pepper flakes. Adjust seasonings.
Serve immediately or refrigerate. If chilled, return to room temperature before serving.
