Defrost and keep puff pastry in the refrigerator.
Cut guava paste evenly into 8 strips.
Prepare an egg wash. In a small bowl, beat the egg
with a pinch of salt.
Preheat oven 375 degrees. Line two baking sheets
with parchment paper or a silicone baking mat.
Lightly flour a large surface. Roll one sheet of
puff pastry into an 8 x 12 rectangle, size of a
sheet of paper. Keep the other puff pastry sheet
in the refrigerator. Using a pastry brush, paint
8 even rectangular lines with the egg wash onto
the puff pastry. Paint the line in the middle and
then edges, and then 8 rectangles.
Lay a slice of guava paste, or 1.5 Tb of jam, and
then a slice of cream cheese on top, or 1.5 Tb. If
you're not using cream cheese, use 3 Tb of jam.
Dust the surface with flour again. Remove the
second sheet of puff pastry. Roll out an 8x12
sheet and lay this puff pastry on top of the first
one. Press out any excess air.
Using a knife or bench scraper, cut out 8 of the
rectangular pastries using the egg wash
indentations. Using a fork, crimp the edges.
Place four pastries 1 inch apart on each baking
sheet. Brush each pastry top with the egg wash and
then sprinkle some sugar on top.
Bake pastries until golden brown and puffed. About
15 to 20 minutes. Transfer pastries to a cooling
rack and serve warm or at room temperature.
