     Chinese BBQ Pork

Ingredients
3 lb boneless pork shoulder/pork butt
1/4 c granulated sugar
2 tsp salt
1/2 tsp five spice powder
1/4 tsp white pepper
1/2 tsp sesame oil
1Tbsp rice wine
1Tbsp soy sauce
1Tbsp hoisin sauce
 
2 tsp molasses
1/8 tsp red food coloring
3 cloves garlic, finely minced

Reserve 3 Tbsp of above marinade
add 2Tbsp honey
1Tbsp hot water

Instructions
Cut pork into 2 to 3 inch strips. Don't trim off any fat. Combine the sugar, salt, five spice powder, white pepper, sesame oil, wine, soy sauce, hoisin, molasses, food coloring, and garlic in a bowl to make the marinade. Reserve 3 Tbsp of this and set aside.
Rub the pork with the rest of the marinade in a marinade container. Cover and refrigerate overnight or at least 8 hours. Cover and store the reserved marinade in the fridge as well.
Preheat oven to 475 with rack in upper third of oven.Line a sheet pan with foil and place a metal rack on top. Place pork strips on rack leaving space between pieces. Roast 10 minutes then reduce heat to 375 and roast another 15 minutes. Check pieces ever 10 minutes during roasting and decrease temperature if burning starts to occur.
Combine reserved marinade with honey and hot water. Baste pork strips, turn and baste again. Rosat another 10 minutes. Check internal temperature, should register 145 degrees F. Remove from oven and baste both sides again. Let rest 10 minutes before slicing.
Serving Suggestions
Eat as is, cube for use in fried rice, or slice to use in spring rolls.
