     Soup - Paste Fagioli with Ham

Ingredients
1/2 lb deli smoked ham - thick
! cup cannellini beans - rinsed and drained
2 Cups canned diced tomatoes, including juice
1 Cup diced celery
2 Tsp. minced garlic
2 Cups chicken broth
1 Cup water
1/2 Cup acini di pepe pasta
1 Tbl. olive oil
 
1/2 Cup fresh basil
salt and pepper
Grated Parmesan - optional
Italian seasoning - 1 tsp.

Instructions
Cut ham into 1/2 inch cubes and set aside. Add the beans, diced tomatoes with juice, celery, garlic, chicken broth and water to a large saucepan. Bring to a boil. Cover and simmer on medium for 5 minutes.
Remove lid and addd the pasta. Return to a boil and cook, uncovered, for about 8 minutes, or until the past is cooked. Add the ham, olive oil and basil and remove from heat.
Add salt and pepper to taste. Put into two soup bowls and sprinkle with Parmesan cheese.
Thiis was the right amount for two people. It needed a little italian seasoning, or use tomatoes with garlic and oregano.
