     Twice Baked Potatoes

Ingredients
3 lbs red potatoes
1/2 lb butter, softened
1 cup sour cream
1/2 cup cooked, chopped bacon
1/3 cup chives
1/2 cup grated parmesan cheese
2 cups shredded cheddar cheese
Salt and pepper to taste
 

Instructions
Boil potatoes in lightly salted water until fork tender. Drain water and place potatoes in mixing bowl.
Add butter, sour cream, bacon, chives, and parmesan cheese. Use potato masher to mash until everything is combined and smooth.
Add salt and pepper to taste. Spoon potatoes into a greased pan, top with cheddar cheese.
Back at 350 for 20-25 minutes or until cheese is melted and just starting to brown.
