Preheat oven to 350 degrees. Season chicken with salt and pepper. Dredge chicken in flour. Set
chicken aside. Saute bacon until just beginning to crisp. Transfer bacon to plate.
Add oil to skillet and brown chicken on both sides until golden brown. Transfer chicken to plate.
Add garlic and shallot to skillet and saute until tender. Add sherry to skillet and reduce. Then
add stock.
Return chicken and bacon to skillet. Top chicken with butter. Cover and transfer skillet to oven
and cook for 30 minutes. Baste occasionally during cooking. Remove cover, baste again,
sprinkle parsley over chicken, increase temperature to 400 degrees and cook another 20
minutes.
Remove skillet from oven and serve.
