Ingredients
1 1/4 lb red potataoes
3 Tbls shallots miced
3Tbsp white whine vinegar
2 Tbsp olive oil
1 Tbsp Dijon Mustard
1 tsp sugar
salt and papper to taste
3 cups arugula
 

Instructions
boil poaptaoes till tender and chill till cold
whist shallots, vinegar, oil, mustard, sugar, salt, and pepper in large bowl
Saute chilled potatoes in cast iron skillet in medium heat one one side 10 mins. Stir potatoes and continue to brownuntill crisp 10-15 mins.
toss potatoeswith vinegarette and arugula untill coated
