Marinade ground pork with some fish sauce, bouillon,
and white parts of the green onion for 30 minutes.
In a large stockpot, add rice and 12 cups of
liquid. Can use any combination of water and
chicken broth.
If using cooked rice, add 8 cups of liquid and
cook for less time.
Heat on high until liquid is boiling, then put on
low heat to simmer for about 45 minutes. Cover
pot and stir often so rice doesn't burn at the
bottom.
The porridge will appear runny but will thicken a
lot once cooked and is cooling.
While porridge is cooking, heat a large saute pan on
medium heat and add 1 Tb of oil. Cook ground pork.
Set aside.
Once the porridge is about halfway done, add
cooked ground pork and ginger. Taste and season
porridge with more fish sauce, bouillon, sea salt
and a dash of white pepper to taste.
When almost done, add green onions and cilantro.
Adjust seasoning.
Serve with Asian donuts and additional cilantro,
green onions and ginger on the side. Can also
substitute ground pork for cooked shredded
chicken. Serve that with fish sauce slaw.
