     Creme Brulee

Ingredients
4 egg yolks
3/4 cup heavy cream
1/4 cup granulated sugar
2 tsp vanilla extract
2 tsp granulated sugar
 

Instructions
Preheat oven to 300. OPTIONAL- Heat water in tea kettle
Mix egg yolk, vanilla and sugar together to combine. Slowly whisk in heavy cream. NOTE- don't over-whisk. Keep the whisk submerged. Pour mixture into two ramekins. Place ramekins in a larger casserole dish and pour hot water to create a bath. bake in oven for 45-60 minutes, until custard is set.
Cover with wrap and refrigerate for 2-24 hours.
To serve, sprinkle a layer of sugar on top and heat with a kitchen torch (or under a broiler). Top layer should be crystalized and golden brown. Make it fancy with fruit (strawberries!)
