     Coffee Cake Cookies

Ingredients
1/2 C unsalted butter softened
1/2 C firmly packed brown sugar
1/4 C granulated sugar
1 large egg
1/2 tsp vanilla
2 C cake flour
1 tbl cornstarch
1 tsp baking powder
1/4 tsp baking soda
 
1/2 tsp salt
Streusel
1/2 C salted butter plus more if needed
3/4 C flour
1/2 C firmly packed brown sugar
1/2 C sugar
1 tsp cinnaomon
1/2 tsp salt
Gaze powdered sugar and milk

Instructions
Heat oven to 350. Line a baking sheet with parchment paper and set aside Cream butter and sugar in mixing bowl until light and fluffy. Add egg and vanilla and mix until fluffy. In a small mixing bowl combine cake flour, cornstarch, baking powder, baking soda and salt. add to butter mixture and mix by hand until dough forms. Place in bowl, cover and refrigerate while making streusel
Streusel. Melt butter and set aside. In a md size bowl combine flour, sugars, cinnamon and salt. Stir to combine. Add butter and mix until forms a clumpy mixture like wet sand. If too dry add a little more melted butter but I adjusted amount so it should be ok.
Roll about 2 tbl of dough into balls and place 2 inches apart on cookie sheet. Make a well inside each cookie with your thumb. Roll about 2 tbl of streusel into a ball and push it into cookie dent. Bake for about 12 minutes or until edges are just beginning to turn light golden brown. Allow to cool for at least ten minutes before glazing
To make glaze whisk together about 1 C confectioners sugar and about 2-3 tbl milk. Adjust as needed. Should be thin enough to drizzle but thick enough to stay on cookie. Makes about 12 big cookies. Delicious
