1/3 Cup grated Parmesan, 2 Tbl. fresh basil or parsley
Set oven to 450 deg. Spray baking dish with Pam. Whisk eggs,
garlic, parsley, salt and pepper. Marinate chicken with this mixture,
15 minutes or overnight.
Mix breadcrumbs, Parmesan, garlic powder in a bowl. Bread the
marinated chicken. Heat oil and fry chicken 4-5 minutes per side. Put
in baking dish and top each with 1/3 Cup sauce, 2-3 slices
mozzarella, and 2 Tbl. Parmesan, Sprinkle with basil or parsley
Sauce - Heat 1 Tbl. olive oil and fry onion 2-3 minutes. Add garlic for
30 seconds. Add puree, salt and pepper, Italian seasoning and sugar.
Cover and simmer 8 minutes until thickened.
Bake for 20 minutes.
