     Chicken - Lemon Oregsno Chicken Thighs

1/4 Cup fresh lemon juice
1 Tbl. minced garlic
1 Tbl. grated Parmesan
1 Tbl. dried oregano
pinch of salt and cracked black pepper to taste
1 Tbl olive oil
6 boneless, skinless chicken thighs

Mix lemon juice, garlic, Parmesan cheese, oregano, salt and pepper, 1 Tbl. olive oil. Put into a gallon bag with chicken and marinate for 20 minutes up to 4 hours.
If frying, coat large non-stick pan with olive oil. Cook chicken over medium-high head for 5-7 minutes per side until cooked through. Chicken can also be cooked on the grill. Or placed into a 425 deg. oven for 20 minutes on Parchment paper. Baking is what we did.
Easy to make and good. Served with 90 second chicken rice and a side salad.
