     Dauohin Street Flounder

Ingredients
1 strip bacon, finely chop
1/2 small onion, finely chopped
1/4 teaspoon salt
1/8 teaspoon pepper
1 flounder, cleaned about 3 pounds
Paprika
2 tablespoon lemon juice
Parsley sprigs
Lemon wedges
 

Instructions
Preheat broiler. Combine bacon, onion, salt, and pepper. Line a broiler pan with foil. Place flounder skin side down on foil. Cut 3 diagonal slashes in belly side flounder. Fill slashes with bacon mixture. Sprinkle remaining mixture over the fish. Sprinkle paprika and lemon juice.
Broil 6 inches from source of heat until fish flakes 15-18 min. Brush with pan drippings 2 or 3 times
Place on hot platter and granish with parsely and lemon wedges
