     Seafood - Scallops with Tomato pasta

Ingredients
3/4 lb. Sea Scallops
1/4 Cup plain breadcrumbs
2 tsp. butter
2 oz. white wine
2 Tbl. grated Parmesan
1/4 tsp. salt
Chopped parsley for topping
Lemon juice to squeeze on top
 
Pasta -
Angel hair or linguini
1/4 Cup butter
2 Cloves minced garlic
1/2 Cup heavy cream - Optional
Seasoned Diced tomatoes, 1 Can - Optional
2 Tbl. fresh basil and parsley

Instructions
Preheat oven to 350 deg. Rinse scallops and remove tabs. Place in a bowl and toss with breadcrumbs. Put scallops into a 2 qt. baking dish. Cut butter into small pieces and place on top of scallops. Add wine to dish ad bake for 15 minutes. Place under the broiler for 15 seconds to brown.
Meanwhile, cook a small handful of angel hair for linguini pasts. Drain. Melt 1/4 Cup butter over medium heat. Stir in garlic and cook just until softened, about 1 minute. Add basil and parsley, if using.
Add cream if using. Or add diced tomatoes if using those. Serve pasta, top with scallops, then top with the sauce of your choice.
If you don't want a sauce, add some wine to the butter and garlic and serve scallops with a salad and vegetable or rice. NOTE- This scallops are very easy to make. The pasta gives you many choices.
